Finally, a recipe! I have been meaning to post recipes but to be honest, most of the stuff that I have been making lately are just made up recipes and I have not really made the time to actually pay attention and write down the measurements while cooking.
I am not the best at following recipes, I always end up adding and subtracting ingredients. The only time in my life that I ever followed recipes without changing them was during my professional cooking course which I took 4 years ago. For the duration of the course, which was five months, I did not dare or even think about changing a thing about the recipes that we were given to make during class.
J’s parents came over yesterday for lunch and I decided to make Persian food. I absolutely love, love, love Persian food. The only bummer about it is the fact that it is time consuming. I made Khoresht Ghaimeh which is one of my favorites and everyone seemed to enjoy it. I was too busy serving the food to take a picture of the khoresht when I served it, so the picture above is from the leftovers. Nevertheless, very yummy!!!
Khoresht Ghaimeh
2 lb of diced lamb or any other type of stew meat
5 tblp of olive oil
2 medium onions
4 cloves of garlic
5 dried Persian limes
¼ tsp of turmeric
1 ½ cup of water
2 cans of 14.5 oz of diced tomatoes
1 tsp of advieh (Persian spice mix)
¾ cup of split peas
1 cup French fries
Dice the onion and garlic and sauté in olive oil until translucent. Add the lamb and sauté until brown. Add Persian limes, water, and turmeric and cook for 45 minutes. Add the two cans of tomatoes, split peas, advieh, and season to taste with salt and pepper. Cook for about an hour and half or until the split peas are cooked. Place the stew in a serving dish and top with the French fries. Serve with rice.
